Start by sowing the non-GMO seeds directly outdoors. The Early White Vienna seeds will thrive in well drained soil with organic matter and a pH level between 6.5 and 7. Plant the seeds half an inch deep, with four to six inches between plants. Allow a space of eighteen to thirty six inches between rows. While growing, the Early White Vienna crops will need one to two inches of water each week. Kohlrabi is ready to be harvested when the stems have grown to be two to three inches in diameter.
Early White Vienna Kohlrabi, (Brassica oleracea var. gongylodes) has a nickname of Petra. Very similar to cabbage, this variety is much sweeter and creamier. The bulb is a pale green/white color, the stems grow big with large leaves, which can be a replacement for spinach. It likes cooler climates, but will grow in most zones.
